I don't know much of it as facts, just 90% from experience. I'll do Protoss for you.

Protoss
  • Zealot - Max damage against all armor types.
Dragoon - Half damage against light armor, max against all others.
Dark Templar - Max damage against all armor types.
Reaver - Max damage against all armor types.
Corsair - Max damage against all armor types.
Scouts - Max damage against all armor types.
Carrier - Max damage against all armor types.
Arbiter - Half damage against light armor, max against all others.

Well i think that's correct. I don't know the nitty gritty such as each type of armor and each type of damage. I think we'll need to consult AoP for this!

Taken from Blizzard (and not only ;)).

It goes as follows:

* Normal weapons are equally effective against all types of units.
* Concussion/Plasma weapons do 50% damage against Medium units and 25% against Large units.
* Explosive weapons do 50% damage against Small units and 75% against Medium units.

Note: Protoss shields take full damage from all kind of atacks, and buildings are always considered as "Large" (that's why units like the vulture takes a load of time to destroy it).

There is also another type of damage class, the splash damage. The atack of units such as the Sieged Tank provokes a small explosion around the atacked unit that will damage nearby units.

There's also the Lurker's and Firebat's type of splash damage, in a line.

--Edit--

Check here for all units sizes and attack type:

Units in StarCraft are one of three different sizes: small, medium and large. The size of a unit is taken into account when calculating the effects of different classes of damage. This is why, for example, a Firebat is very effective against Marines, but has a minimal effect on Siege Tanks. The damage classes and their effectiveness in relation to the three unit sizes are as follows:

* Normal weapons are equally effective against all types of units.
* Concussion/Plasma weapons do 50% damage against Medium units and 25% against Large units.
* Explosive weapons do 50% damage against Small units and 75% against Medium units.

Protoss shields always take full damage from all attacks. Buildings are considered "Large" units.

Some attacks, such as the Scarab explosion, also do "splash damage", which means that any units or buildings within a short radius of the attack point will take a peripheral amount of damage.

The following table lists each unit's size and damage type:

Actually, I don't know many statistics. I couldn't tell you how much vitality a zealot has for example. But after playing the game for a long time you get the feel of units and when they're about to die. This becomes very useful when microing. Knowing how much vite. your goon has isn't :)
